Why it is ours

Black watermen and crab pickers built the Chesapeake crab industry from the 1870s through the 20th century. Black women processing crabs on Maryland's Eastern Shore built the state's culinary identity. That labor is baked into every crab cake.

What it does

Blue crab is one of the leanest, highest-protein shellfish available. Its omega-3 profile supports cardiovascular health — directly relevant as Black Americans die from heart disease at higher rates. Zinc and selenium support immune function and thyroid health.

How it is cooked

A true Chesapeake crab cake is mostly crab — lump or jumbo lump blue crab, minimal binder (egg, mayo, a little breadcrumb), Old Bay. Pan-sear or broil; never deep-fry a proper crab cake.
