Salmon

APEX's tier-1 fish. Omega-3 density that directly counters the inflammation driving Black cardiovascular disparity.

Why it is ours

Salmon croquettes (salmon patties) — canned salmon formed into patties with egg, onion, and cornmeal — are a real Black American tradition passed down from grandmothers.

What it does

Salmon delivers 1.5-2g of EPA+DHA per 3oz serving — the threshold shown to reduce triglycerides by 20-30% and lower systolic blood pressure. Astaxanthin gives salmon its color and is one of the most potent antioxidants in the food supply.

How it is cooked

Wild-caught Alaskan sockeye or pink salmon is the gold standard. Canned salmon (bones included) delivers calcium on top of omega-3s — the bones are soft enough to eat.
