APEX Legacy · a way of life

Dulse

Red Atlantic seaweed with one of the highest protein contents of any seaweed (21-25% dry weight), high in potassium, iron, B vitamins, and unique marine antioxidants. When dried and pan-fried, dulse has a bacon-like smoky flavor — the smokiness that Black American cooking craves can be achieved with the most nutrient-dense seaweed available.

Why it is ours

The smoky, salty food that Black American cooking is built on — dulse delivers that flavor profile as medicine. The smoked meat flavor from a sea vegetable is the rehabilitated soul food connection that APEX is designed to make.

What it does

Dulse protein content (21-25% dry weight) is among the highest of any plant food — comparable to soy protein. The potassium density (when reconstituted from dry) supports blood pressure reduction through sodium-potassium ratio improvement. Iron content (16mg/100g dry) addresses iron-deficiency anemia. The smoky flavor profile when pan-fried creates a direct soul food connection — smoked meat flavor without the saturated fat.

How it is cooked

Available at health food stores, Atlantic coastal specialty shops, and online. Pan-fry dried dulse 30-60 seconds per side in dry or lightly oiled pan — develops bacon-like crispiness and smoky flavor. Add to salads, wraps, grain bowls. Dulse flakes available as seasoning.
