Why it is ours

Summer pea-shelling is a communal, cross-generational ritual. Farmers markets from the Carolinas to East Texas sell fresh field peas July through September.

What it does

Crowder peas show anti-inflammatory polyphenol profiles in recent phytochemical research. High potassium-to-sodium ratio directly supports hypertension management. Purple hull variety has higher antioxidant load than black-eyed peas.

How it is cooked

Fresh: shell and rinse. Simmer in seasoned water 25–35 min. The pot liquor is mineral-rich — don't discard it. Dried: soak overnight, simmer 45–60 min.
