What it does

Among the highest antioxidant loads of any food. Iron content supports anemia prevention, important given higher rates in Black women. Resistant starch survives digestion, feeding gut microbiome and blunting post-meal glucose spikes. Red beans carry the soluble fraction the visceral-fat research points to, which puts Monday's red beans and rice on the list on its own terms — the rice is not the part being described, the beans are.

How it is cooked

CRITICAL: raw kidney beans contain phytohaemagglutinin — always boil vigorously for at least 10 minutes before simmering. Never cook raw kidney beans in a slow cooker on low.
