Why it is ours

The Creole holy trinity — onion, celery, and green bell pepper — is the aromatic foundation of Black Louisiana cooking. No gumbo, no red beans and rice, no jambalaya starts without it.

What it does

Green bell peppers have more Vitamin C than oranges by weight. Vitamin B6 supports nerve function and glucose metabolism — important for Black Americans managing prediabetes and type 2 diabetes.

How it is cooked

Add to the pot early when building a roux-based dish. Dice fine for a mirepoix role; slice thick for stuffed peppers.
