Ham hocks are the flavor backbone of collard greens, pinto beans, and black-eyed peas across Black American households. The hock pot is a generational tradition that anchors food memory.

What it does

Ham hocks deliver 800–1,200 mg sodium per hock before any other salt is added. For communities with 1.5x the hypertension rate of the general population, this is a significant cumulative load.

How it is cooked

If using, use one hock for a large pot (6–8 servings). Do not add additional salt during cooking. Better move: substitute a smoked turkey wing — same flavor, 30–40% less sodium.
