Pork chops are a mid-week protein reality for Black households across income levels — affordable, available, and satisfying.

What it does

Center-cut loin chops are among the leaner pork cuts — comparable in fat to chicken thighs. The tier 2 risk comes from preparation: pan-frying in heavy oil, or drowning in high-sodium canned gravy.

How it is cooked

Choose center-cut or loin chops over blade or rib chops for less fat. Pan-sear in cast iron with a small amount of avocado oil then finish in the oven at 375°F.
