Chicken

Lean, versatile protein. Baked and stewed forms are the ancestral baseline — before industrial frying took hold.

Why it is ours

Chicken is the workhorse protein of the Black American table — Sunday dinner, weeknight meals, hospital care packages, and church fellowship all center it.

What it does

Skinless breast or thigh baked or stewed delivers 25–30g protein per serving with minimal saturated fat. Supports muscle retention during weight loss and stabilizes blood glucose.

How it is cooked

Remove skin before or after cooking to cut saturated fat by ~50%. Stewing in low-sodium broth with aromatics preserves moisture without added oil.
