APEX Legacy · a way of life

Hot Links

Spicy pork links at every Black cookout — Chicago red hots on white bread with sport peppers, or Deep South links over coals.

Compiled by APEX Legacy from published research and documented food history, under the editorial direction of Jonathan Jackson, Founder. How we write and review these pages →

Why it is ours

The hot link is non-negotiable at a Black cookout. In Chicago, red hots from Maxwell Street vendors are part of the city's Black culinary identity. Every family has their preferred brand or source.

What it does

High in saturated fat and sodium. The capsaicin in sport peppers has modest anti-inflammatory effects but doesn't offset the processed meat load. A cookout food, not a daily protein.

How it is cooked

Grilled over charcoal or hickory wood until casing blisters. Chicago style: on white bread, sport peppers, yellow mustard, sometimes coleslaw. Deep South style: whole over a plate of white beans or on a stick.
