Why it is ours

Cornish hens were the upgrade — the bird you got when a whole chicken wasn't enough to go around, especially for smaller families or when you wanted the holiday table to feel special. Each person got their own bird, and that mattered.

What it does

Leaner than chicken thighs when skin is removed. Good source of zinc and selenium. A complete protein in a built-in serving size with no carving needed.

How it is cooked

Rub under the skin and outside with garlic, seasoning salt, onion powder, paprika, and butter or olive oil. Roast breast-side up at 425°F for 45–55 min until juices run clear. Rest 10 min before serving.
