Why it is ours

In Texas and the Deep South, goat has been the Juneteenth meat for generations. The annual June 19 celebrations that anchored freedom memory in the Black community were marked with whole roasted or stewed goat.

What it does

Goat is leaner than beef with comparable protein and more iron per serving. Lower in saturated fat than most red meats. One of the most nutrient-dense red meats available.

How it is cooked

Cut bone-in for maximum flavor. Brown in batches in a heavy pot with oil. Add onions, garlic, scotch bonnet or jalapeño, tomatoes, and stock. Simmer low and slow 2–3 hours until fall-off-bone tender. Season with thyme, allspice, and black pepper.
