Why it is ours

Less mainstream than chitlins but present in Deep South Black cooking as part of the same tradition. West African communities in the South recognize the preparation from pepper soup technique.

What it does

Tripe is rich in collagen and gelatin when slow-cooked — supports joint and gut lining health. Low in fat, high in protein. Nutritionally underrated because of texture stigma.

How it is cooked

Purchase pre-bleached honeycomb tripe. Rinse, then parboil with onion and vinegar for 30 min; discard water. Add to a fresh pot with diced tomatoes, onion, bell pepper, scotch bonnet, garlic, and stock. Simmer 1.5–2 hours until tender.
