Millet Porridge

Warm porridge from pearl millet — magnesium-rich, iron-dense, thyroid-supportive (iodine content), and alkaline-forming unlike most grains. Millet is one of the few grains that is alkalizing after digestion — reducing the acid load that contributes to bone density loss and inflammation.

Why it is ours

The staple grain of the West African Sahel — the region from which many of the enslaved people taken to the Americas came. The Wolof, Mandinka, and Hausa agricultural traditions were built on millet. APEX returns millet to the Black American table with its full cultural and nutritional history.

What it does

Millet's magnesium content (114mg/100g) makes it exceptionally relevant for the weathering hypothesis mechanism: chronic cortisol depletes magnesium → sodium-sensitive hypertension. Millet directly replenishes the magnesium that stress depletes. Alkaline-forming property reduces acid load on kidneys — relevant to the higher CKD prevalence in Black Americans (APOL1 variant).

How it is cooked

Rinse millet thoroughly. Toast in dry pan 2-3 minutes for nutty flavor. Simmer 1 cup millet in 2.5 cups water for 20-25 minutes. Serve as porridge with cinnamon and honey, or as savory grain bowl base. Available at health food stores, African stores, and some conventional grocery stores.
