APEX Legacy · a way of life

Mortgage Lifter Tomato

A giant, mild, meaty pink beefsteak — fruit can top two pounds. Famous for the Depression-era story of the man who bred it to save his home.

Why it is ours

A tomato that is literally a story of surviving economic hardship through ingenuity and shared seed — a value deeply familiar in the Black rural South, where the garden was insurance against a system that offered none.

What it does

An enormous, low-seed slicer dense with lycopene, the prostate-protective carotenoid that matters disproportionately for Black men facing twice the prostate cancer death rate. Heat and dietary fat dramatically raise lycopene absorption, so a pot of stewed Mortgage Lifters out-delivers the same tomatoes raw. High potassium and low calorie density support blood pressure and weight management.

How it is cooked

One fruit can feed a sandwich for a family. Slice for fresh eating or cook down into a rich, low-acid sauce. Cook with olive oil for lycopene.
