Why it is ours

Mushroom bacon is the umami-forward topping in Black plant-based cooking — the savory crisp that makes a vegan BLT or a bowl of greens taste like it has depth and smoke.

What it does

Mushroom bacon brings real, if modest, functional benefit beyond flavor: beta-glucans that support immune balance and modestly lower cholesterol, ergothioneine (a potent antioxidant the body retains under stress, relevant to weathering), and B vitamins. Shiitake in particular carry compounds studied for cardiovascular support. It is low in protein — a topping and flavor builder, not a protein anchor — so pair it with beans or grain. As a bacon swap it removes the nitrates, saturated fat, and processed-meat carcinogen load that hit the Black community hard, while adding antioxidants instead.

How it is cooked

Slice mushrooms thin and even, toss lightly with oil, tamari, smoked paprika, and a drop of liquid smoke, and roast at 375°F, flipping once, until the edges crisp and chew. They shrink a lot — start with more than you think. A pinch of maple balances the smoke.
