Available everywhere. Costco offers bulk at significant cost savings. As a bridge food toward ancestral grains — APEX recommends fonio, teff, and millet as priorities, quinoa as the accessible starting point.

What it does

Complete amino acid profile including lysine — the amino acid most deficient in other plant proteins. The magnesium content directly addresses the 75% deficiency rate in Black Americans. Iron content in a plant-based complete protein is rare. The glycemic index (53) is significantly lower than white rice (73), making it a meaningful substitution for diabetes management.

How it is cooked

Rinse well before cooking — removes saponins (natural bitter coating). 1 cup quinoa to 2 cups water, bring to boil, reduce heat, simmer 15 minutes. Season generously — quinoa absorbs surrounding flavors well.
