What it does

Lentinan — the specific beta-glucan isolated from shiitake — is a registered pharmaceutical drug in Japan (Lentinan injection, made by Ajinomoto) approved for gastric cancer treatment. Multiple clinical trials demonstrate lentinan extends survival in gastric and colorectal cancer when combined with chemotherapy. The clinical distinction between shiitake and turkey tail is the molecule: lentinan (shiitake) is a 1,3-1,6-beta-glucan; PSK (turkey tail) is a proteoglycan. Together they activate complementary immune pathways. Ergothioneine is the most remarkable compound in shiitake: it is a non-standard amino acid that humans cannot synthesize — we must obtain it from dietary fungi. It concentrates in tissues with high oxidative stress: red blood cells, liver, kidneys, eyes, and the mitochondria. Multiple studies have identified ergothioneine as a longevity biomarker — higher blood ergothioneine is associated with longer lifespan and lower cognitive decline. For cholesterol: eritadenine inhibits S-adenosylmethionine (SAM) enzymes involved in cholesterol biosynthesis, reducing cholesterol absorption — a completely different mechanism from statins.

How it is cooked

Remove tough stems (save for broth). Slice caps and sauté in butter or olive oil 5-7 min. In soups, ramen, stir-fries, grain bowls. Dried shiitake: soak in warm water 20-30 min, use the soaking water as a rich broth. Sun-expose gill-side up before cooking for vitamin D2.
