Why it is ours

T2D affects 13.4% of Black Americans (vs 7.5% nationally). Maitake offers a food-based insulin sensitizer with clinical evidence that Black patients are rarely told about in standard endocrinology care.

What it does

SX-fraction from maitake stimulates GLUT4 transporters (same target as insulin itself) — increases cellular glucose uptake without requiring additional insulin secretion. Human pilot study (2010) showed SX-fraction reduced blood glucose by 10-30% in T2D patients. D-fraction activates NK cells and macrophages with particular potency against tumor surveillance. PCOS relevance: insulin sensitization reduces androgen excess (the primary driver of PCOS symptoms).

How it is cooked

Excellent as food — dense, meaty, holds up well to high heat. Roast at 425°F until crispy at edges. Sauté in cast iron. Use extract/powder for therapeutic blood sugar dosing (1-3g D-fraction daily). Fresh maitake at Asian grocery stores; dried/powdered at health food stores.
