Why it is ours

Shiitake is in Walmart, Kroger, and Food Lion. The barrier to entry is near zero. For Black families managing high cholesterol without wanting to escalate to statins, or dealing with HPV — a condition that disproportionately affects Black women — shiitake is a legitimate, studied intervention available at mainstream grocery prices.

What it does

Lentinan, shiitake's signature beta-glucan, has been approved in Japan as an adjunct cancer therapy since 1985 — it stimulates NK cell activity and macrophage function with demonstrated 50% improvement in T-cell counts in HIV-positive patients in a 2010 USDA-funded study. Eritadenine reduces LDL by interfering with cholesterol absorption in the gut — independent of statin pathways, making it relevant for statin-intolerant patients. AHCC (derived from shiitake mycelia) has been studied specifically for HPV clearance in Black women, with a 2020 University of Texas study showing 63% negative conversion rate. Ergothioneine concentration is highest in shiitake among all culinary mushrooms — this rare amino acid accumulates in mitochondria and shields cells under chronic stress, directly relevant to the Weathering Hypothesis. Sun-dried shiitake spikes vitamin D2 content dramatically — critical for Black Americans with documented high rates of vitamin D deficiency.

How it is cooked

Remove stems (tough, fibrous — save for broth). Slice caps and sauté in olive oil or coconut oil over medium-high heat until edges crisp — this caramelizes sugars and intensifies umami. Do not crowd the pan. Rehydrate dried shiitake in warm water 20-30 minutes; the soaking water is medicinal broth, use it. Dried shiitake has higher lentinan concentration than fresh — consider a mix of both.
