Why it is ours

Coconut cake is the white Christmas cake — electric white with coconut snow — and it shows up at holiday tables and Easter dinners across Black Southern households. Its visual drama (the whole cake coated in coconut) makes it a showpiece. Every Black grandmother who made this felt a particular pride in how it looked.

What it does

Coconut provides manganese and medium-chain triglycerides in modest amounts, but the cake as a whole is sugar-forward. The 7-minute frosting is cooked meringue — lower fat than buttercream but very high in sugar.

How it is cooked

7-minute frosting requires a double boiler, a hand mixer, and patience — it's cooked egg whites and sugar beaten over simmering water until stiff and glossy, then flavored with vanilla or almond extract. Fresh grated coconut is superior; sweetened shredded coconut is the practical standard. Press coconut into frosting immediately before it sets.
