Why it is ours

Pound cake is the bereavement cake, the hospital cake, the new-neighbor cake. It travels. It keeps. It says 'I care about you' without saying a word. Every Black church has someone known for her pound cake, and that reputation is not trivial — it represents skill, consistency, and care.

What it does

Pound cake is calorie-dense with minimal fiber or micronutrient density. The egg content provides protein and fat-soluble vitamins. Sour cream and cream cheese versions add calcium. A treat food — the nutrition is secondary to its cultural function.

How it is cooked

Room-temperature ingredients are non-negotiable — cold butter or eggs will not cream properly. Cream butter and sugar for 5-7 minutes until pale and fluffy. Add eggs one at a time. Fold flour gently. Do not overmix once flour is added or the crumb turns tough. Bake at 325°F low and slow for even rise. A crack along the top is a sign of proper leavening, not error.
