White Rice

Why it is ours

It is the base of red beans and rice, the vessel for gumbo and stew, the side for fried fish and smothered chicken. It is not decorative — it is structural.

What it does

Enriched white rice provides B vitamins added back after milling. Pairing white rice with beans (as is culturally standard) significantly lowers the overall glycemic response through fiber buffering.

How it is cooked

Rinse rice before cooking to remove excess starch. Standard ratio: 1 cup rice to 1.75 cups water. For lower glycemic load: cook, cool overnight in refrigerator, reheat — converts some starch to resistant starch.
