APEX Legacy · a way of life

Greek Yogurt

Concentrated strained yogurt with 2x the protein of regular yogurt, probiotic activity, and a high calcium density. Full-fat version provides CLA and fat-soluble vitamins without the blood sugar spike of non-fat versions (fat slows glucose absorption). Casein protein is slowly digested — sustained protein release.

Why it is ours

Yogurt is present in current Black American food culture — APEX contextualizes the full-fat vs. non-fat choice (full-fat wins), the North African origin, and the specific probiotic mechanism.

What it does

Full-fat Greek yogurt's casein protein provides slow-release protein for 5-6 hours — ideal for blood sugar stabilization in T2D management. Probiotic strains (Lactobacillus bulgaricus, Streptococcus thermophilus) support gut microbiome with well-studied strains. Calcium in dairy has higher bioavailability than plant calcium sources due to the lactose and protein matrix.

How it is cooked

Available at all grocery stores. Full-fat is nutritionally superior to non-fat — fat slows digestion and increases fat-soluble vitamin absorption. Use plain, unsweetened. Add fresh fruit, raw honey, and chia seeds for complete breakfast.
