Evaporated Milk

Shelf-stable concentrated milk — the dairy that made mac and cheese, sweet potato pie, and coffeehouse-style coffee possible without a refrigerator.

Why it is ours

Carnation was the milk in the Black pantry before refrigerators were standard equipment. It remained because it worked — the texture it gives mac and cheese and sweet potato pie is different from fresh milk and better in both applications.

What it does

Provides real calcium and vitamin D in a shelf-stable format. More nutrient-dense than regular milk per ounce. A legitimate dairy contribution to a diet that may otherwise lack dairy access.

How it is cooked

Used undiluted in mac and cheese custard for creaminess. Diluted 1:1 with water as a milk substitute in recipes. In coffee: added by the spoonful before the coffee pour. In sweet potato pie: blended into the filling before baking.
