Why it is ours

The small pull-tab can in the back of the pantry. Every Black American household with tighter budgets knew this can. It was the protein that didn't require cooking, shopping, or refrigeration.

What it does

Nutritionally limited — high sodium, mechanically separated meat, preservatives. Protein is present but not the most bioavailable form. No shame in knowing this; it filled a gap when fresh protein was unavailable.

How it is cooked

Served cold from the can spread on saltine crackers. Some households added hot sauce, a slice of American cheese, or diced onion. Can also be mixed with mayonnaise and relish into a spread.
