Why it is ours

A farmers-market eggplant that makes healthy eating feel like abundance rather than restriction — a reminder that the produce that heals can also be the produce that delights.

What it does

The variegated skin carries anthocyanins including nasunin, with the same membrane-protective antioxidant role studied in dark eggplant skin. Creamy, low-seed flesh means little bitterness and low oil uptake when roasted. Fiber and chlorogenic acid support metabolic and heart health at a low glycemic load.

How it is cooked

Best roasted or grilled to show off the sweet flesh; the thin striped skin needs no peeling. Slice and roast at 425°F until collapsing and caramelized.
