What it does

Like its African cousins, Thai eggplant is mostly water and fiber with a low glycemic load, making it a smart bulk food for blood sugar control and weight management. The skin carries polyphenols and chlorogenic acid with antioxidant activity. Potassium supports blood pressure. Its crunch and bitterness make small portions feel substantial.

How it is cooked

Quarter and add to green or red curry near the end of cooking so it keeps a slight crunch. Browns quickly once cut, so drop into acidulated water. Stir-fries well with garlic, basil, and chili.
