What it does

Thin-skinned Japanese eggplant delivers the same nasunin anthocyanin as the globe with less of the spongy interior, so it absorbs less oil and cooks quickly. Fewer seeds means less bitterness and a sweeter flesh that needs no salting. Soluble fiber and chlorogenic acid support cholesterol and blood-sugar management. A practical low-calorie, low-glycemic choice for fast weeknight cooking.

How it is cooked
